Clarifying Beer by Gregory McLaw

It’s been nearly a month and you’ve waited patiently for your latest batch of homebrewed beer. The time has come and you open a bottle or pull the tap and begin to fill a glass of what you hope will be your next favorite beer (generally speaking my favorite beer is usually the one I’m drinking at the moment). The taste is great but the beer is hazy and not very clear. You know it taste good but it’s hard to convince your friends, who are used to buying and drinking sparkling clear beer, that the cloudy haze is alright to drink and really doesn’t affect the taste. It’s widely acknowledged that visual appeal is a major factor for most people when drinking a beer. So, how do we clear things up? A variety of clarifying agents (called finings) and techniques are available to encourage your beer to clear. The term “fining” can refer both to the process of clarifying beer or to the agents themselves.

Aside from infection and the introduction of foreign particulates into open vessels, beer clarity, or the lack thereof, is caused by yeast cells and non-microbiological particles (NMP’s). Sometimes the yeast is just stubborn and will not settle out of the beer. Different yeast strains exhibit different characteristics during flocculation which produce different problems in settlement. But the biggest problems with clarity, since they are more difficult to remove than yeast, are non-microbiological particles. The term NMP covers protein, usually associated with polyphenols and other molecules such as lipids, carbohydrates, and/or metal ions. NMP’s are produced, and should be removed, during each stage in the brewing process.

If you are an all-grain brewer then the clarity of your beer is affected by the amount of fine dusty starch and husk particles created during milling. Most of these particles can be removed during sparging and recirculating the wort through the mash bed prior to run-off. Coagulation of protein occurs during the wort boil. A successful boil means a more efficient coagulation of proteins resulting in large flocs which can be more easily removed as well as the removal of polyphenolic material which reduces chill-haze. A successful boil is one that begins with a high wort pH with sufficient proteins present. The boil should be around 215ºF for at least one hour. If the boil is not successful then fine flocs are created and remain suspended in the wort. Clarifying agents during the end of the boil can aid in the removal of particles and help to produce a clear beer.

Wort cooling causes the proteins to interact with polyphenols to precipitate as cold break. It is essential that the cold break be precipitated as much as possible, which is done by rapid wort cooling. The wort must be force-cooled to below 50ºF to secure a satisfactory break, and it precipitates best at 32 to 41ºF. A sparkling clear beer can be brewed by cooling the wort just above freezing until it becomes slushy. This procedure reduces the need for clarification. A long, slow cooling does not give a good cold break because more protein is trapped in suspension producing a finer trub, chill haze, and sometimes a sulfur-like aftertaste to the beer.

During fermentation several physical changes occur, which both produce particles, and facilitate their removal. First is yeast reproduction creating more yeast cells an a lower pH which facilitates the interaction of protein and polyphenols to form NMP’s. As the alcohol level increases the viscosity of the brew is decreased which aids in the sedimentation of the particles. So the longer you can restrain yourself from tapping into or pouring yourself a cold one the clearer the beer will be. After fermentation further sedimentation occurs during the cooling of the beer prior to serving. Particle removal at this stage can be augmented by isenglass and auxillary clarifying agents.

The most popular clarifying agent is, no doubt, Irish Moss. Irish moss is a type of seaweed gathered along shores of the north Atlantic, including Ireland from whence it derived its name. It sometimes is referred to as carrageen, the name of its active ingredient. Irish Moss helps coagulate and reduce haze forming proteins. Recommended usage is 1 teaspoon per 5 gallons of beer (wort). Add 15 minutes before the end of the boil. Whirlfloc is Irish Moss prepared in a quick dissolving, highly soluble tablet form. It does the same thing as Irish Moss only that it comes in a tablet form. Usage is 1 tablet per 5 gallons.

Isinglass is a fish-derived additive that’s primarily used to help speed up the clarification of cask-conditioned ales, although some beer-makers will use it to reclaim batches that didn’t filter properly. When the beer is racked into a keg isinglass finings can be added along with priming sugar and dry hops before the keg is sealed up for conditioning. Isinglass contains a very pure form of collagen. Isinglass involves stabilizing the protein and when added to beer isinglass acts like a large open net with positive charges on the surface of the molecule. These charged sites act like little magnets and electrostatically bind yeast cells, due to the negative charge of yeast. The pH of beer is usually around 4.5 and at this level the collagen begins to precipitate from solution. As the collagen precipitates it falls through beer pulling yeast to the bottom of the fermenter. It is also important that you store and use your finings at a temperature range of 42–55 ºF (6–13 ºC), or they simply will not fine your beer correctly.

Gregory McLaw is a regular contributor to www.makebeerathome.info and enjoys brewing and drinking his own beer.

Give Your Celebration Extra Sweetness by Wendy Mitchell

Creating new family traditions and fun memories for Christmas can be both easy and inexpensive.

That’s because candy has been a popular “guest” at holiday celebrations for centuries and lends itself to many memory- and merrymaking activities.

As a National Confectioners Association survey discovered, 81 percent of parents said they received holiday stockings filled with goodies when they were kids. Now, 85 percent of the parents say this is a tradition they are continuing with their children.

Here are some delightful holiday activities you may care to try:

• Make a gingerbread family-gingerbread cookie cutters are inexpensive. Decorate the cookies with icing and candies to create a special centerpiece.

• Create candy ornaments from red and white peppermints or other hard candies. Arrange six candies in a circle with edges touching on a piece of aluminum foil. Place in a conventional oven set at 350 degrees just until they stick together, about one to three minutes. Cool, then tie a ribbon to the top to hang on the tree.

• Create holiday table favors or crackers-with bathroom tissue cardboard rolls. Wrap the roll in holiday-themed paper that extends 3 to 4 inches beyond it. Twist and tie off one end with ribbon. Fill from the open end with wrapped candies, small toys and even a special holiday note for the recipient. Tie off the end with ribbon.

• Pair candy with a gift to make it more memorable (and delicious). For example, pamper Mom with a spa service such as a facial or fancy pedicure. Wrap the spa certificate inside a luxurious towel along with a relaxing CD, a gourmet dark chocolate bar and an aromatherapy candle. Give your teenager a gym membership. Tuck the membership card inside a sports duffel bag-don’t forget a water bottle, new sneakers, energy gum or mints and a portable music player for those high-energy tunes. Treat the movie lover in your life to a gift certificate to the theater or movie store. Place the card inside an empty popcorn bucket with a few boxes of movie-theater-style candy and a film trivia book.

Keep these hints in mind and you can have tasteful holidays and a sweet new year.

For more information, recipes and tips, visit www.candyusa.org; write to the National Confectioners Association, 8320 Old Courthouse Road, Ste. 300, Vienna, VA 22182; or phone (703) 790-5750.

Here’s a sweet idea: Start a new holiday tradition of creating candies as gifts for-and with-your family.

Fruit Baskets Make the Ideal, Personalized Gift by Greg Scott

A fruit basket is a type of gift that is usually delivered to the recipient at home or workplace. Fruit basket is only one type of gift basket. Naturally, a fruit basket consists of fruits only. There is also a type that consists of canned or preserved food and drinks (tea, crackers, abalone, wine and jam). A standard gift basket is the type that includes the selection of both types of baskets mentioned. Expensive gourmet gift basket is similar to the standard gift basket but will include the more exclusive choices of fruits, cheese and wine.

Fruit baskets are gift suited for any occasion. There’s a variety of selections to choose from no matter what the recipients prefer be it standard fruit basket containing apples and pears or exotic fruits like mangoes, persimmons or wild berries. An advantage for giving out fruits is that it is a healthy snack therefore as a giver; you are encouraging healthy eating habits. Not only will the recipients thank you for your generosity but they they’d know that you care about their health too.

A gift basket will often have themes to suit the occasion, such as Christmas, baby shower, housewarming and Valentine’s Day. These baskets will be tailored to suit the recipients’ needs, such as diabetic, vegan/vegetarian, allergic. Although gift baskets do not necessarily have to include food and drink, most of them do as standard practice.

Thinking of making your own gift baskets as gift? First, there are some points to consider before embarking on your creative journey. What product will suit the occasion? The color scheme, age, religion, sex and dietary restriction of the recipients etc. After you have decided on these, you need to assemble all the right materials such as an empty basket, scissor, glue and ribbons. The first step to create a simple gift basket is to fill the bottom of the basket with newsprint preferably till you almost cover the rim. It is useful to add a piece of floral foam to one side of the container so that it will be able to secure whichever enhancements you might be using later. Look around for colored shred paper which will be used to cover the newsprint. Colored shred paper comes in various colors and styles so be sure not to miss the right kind.

Then, add the products. You should add the biggest or tallest one first by putting it in the middle then work way forward. You can do this easily by using skewers or strong packaging tape. Do not neglect the back of the basket. You can also make it look nice by arranging the products to face outward.

Once you are done adding products, you would then use some decorations such as paper flowers, tulle, decorative tissue paper, balloons, etc. to enhance your fruit gift baskets and fill in any empty spots you may have left in the basket. Once you have finished enhancing the gift, you need to decide if you will shrink wrap or cellophane the gift basket. It all depends on which you feel looks better. Remember if you choose to leave a basket at a business for people to see, it is recommended to use shrink wrapping to prevent people from sampling and pulling apart the basket.

When using cellophane tape, you will probably find that getting it to hold the items tight and making your basket appear nice will be a challenge the first time. However, practice makes perfect! A good idea is to use curling ribbon to hold the cellophane and fan out the top.

If your idea of beauty is a handmade bow to for finishing touch, you can easily make one for there are many methods that you can try. Ribbon comes in loads of different colors and width so it would not be a problem to keep to your color scheme. It is important to stick to your initial scheme so that it everything will not be a contrast. Last but not least, do remember to attach a greeting card onto the basket before you go about sending it so that the receiver will know from who it came from.

Chocolate Cheesecake–Two of the Truly Beautiful Words by Greg Scott

Usually, I would not turn down a piece of mouthwatering cheesecake. Nobody I know has the capacity to say no to this utmost delightful and rich dessert. It is now enjoyed by almost everybody in different parts of the world. It has also been adopted as a comfort food for the stressed lot.

Cheesecakes are sweet desserts that resembles buttermilk pies and crème brulee more than cakes. This is because of the rich texture crated by the ingredients. Just like ice cream, the cake just melts away in your mouth before the flavor burst. This sets it poles apart from traditional cakes. To make the flavor richer, chill in the fridge a day before you serve it. Top with whipped cream or fresh fruits to go.

Cream cheese is of course the key ingredient in a cheesecake. Cream cheese was believed to have existed since the Renaissance. Marco Polo noted how the Mongols made their cheese by exposing skimmed milk out in the sun. They also boiled skimmed milk which is still how cheese is prepared until this day. The early record of cheesecake was from the Grecian Olympic Games. Cato the Elder wrote on how to prepare cheesecake in his farming manual “De Agri Cultura”. During the late nineteenth century rich cheese was developed by two New York dairy farmers which were inspired by French Neufchatel. It later became the famous Philadelphia Cream Cheese. This is the world’s leading brand for an ingredient of cheesecake.

Various types of cheesecakes have emerged since it was first introduced. The main ingredients still stay the same, eggs, cream cheese and sugar. The cheese cakes are influenced by the cheese eaten by the people where they came from. Flavors also help add zing to the cake, chocolate and vanilla being the favorite ones. Fruits like kiwis and strawberries add zest to it too. Liquor is added for those who like to be more adventurous. Cheesecakes usually come with a crust base. They are made from any biscuits you prefer. Some cheesecakes are considered easy food to make because you need not bake it

Because of man’s love for chocolate; it has made its way into this delightful treat making it even more sumptuous. The blend of these two incredible soothing foods is mind blowing and the pleasure of eating it doubles. Chocolate cheesecake is simply alluring and with one bite, you’ll be hooked forever.

The cheesecake has earned its fame in becoming one of the enjoyable food that can also soothe your mind. The cake is simply irresistible than you can’t make enough excuses to have it during any meal of the day. It is truly satisfying and the lasting pleasure in every bite will surely erase the stress from your mind. A cheesecake a day makes your stress fade away.

Lobster – a Delicious Treat by Isabel Da Silva..

Lobster is considered a delicacy and many people love its rich taste. Once you have tried this tasty treat, you will definitely want more.

Before heading out and buying one, you should learn a bit about what exactly a lobster is, how to prepare and serve it and where to buy it from.

A lobster is part of the marine species of crustaceans. You get them in different varieties, some with claws and others without. Some clawless ones include slipper lobsters, spiny lobsters and squat lobsters. Each has a slightly different taste and they look different too. Prices vary depending on the type of lobster you get.

Most people think of the reef lobster or the clawed lobster as the main ones to eat. Freshwater crawfish are a kind of lobster and are you can find them in lots of Creole and southern recipes).

If you love seafood, you will almost definitely find lobster to be one of the tastiest and most special types. The lobster looks almost regal, sitting on the plate, and you know with a glance it is going to be succulent and bursting with flavor. Lobster is not cheap but you do get what you pay for.

The best prices (and usually the freshest lobster) is usually found in fishing villages and coastal areas. The price goes up the further you get from the sea. Lobster prices can range from $7.95 to around $29.95 per pound. This depends on the retailer and the location.

If you are going to spend that amount of money on a meal, you need to be aware of how to best prepare the lobster. Preparation is easier than you might think. You should purchase one lobster for each person. The fishmonger might offer to steam the lobster for you before you take it away but it is best to take it home live to get the freshest and best taste from it.

Once you have prepared the meal, the best way to serve lobster is actually a very simple recipe. The steamed, boiled, or grilled lobster should be accompanied by a bib, butter, and lemon.

Usually the simplest recipe is the best, and in the case of lobster, the less frills the better. However, if you should happen to have leftovers (it is rare but does happen!), you can remove the shell and prepare a lobster salad or po’ boy sandwich for lunch the next day.

Eating lobster can make you feel like a true foodie. Remember, you do not have to be a gourmet food snob to enjoy delectable dishes like lobster. As long as you understand where to buy the lobster, how to prepare it, and find a great lobster recipe, you are sure to have a meal to remember. If you are a lobster novice, try your hand at doing a little research in the form of visiting your favorite local seafood restaurant and ordering up!

Why Do People Enjoy Receiving Gift Baskets? by Lauretta Wiering

If you are looking for a more personal gift to give someone whether it’s for a birthday, an anniversary, the birth of a baby, or just to tell them how much you care Ð a gift basket is one of the best gifts you could buy.

Many types of gift are quite impersonal, but with a gourmet gift basket you can add a personal touch and buy a basket that contains products that are appropriate to the recipient. For example, chocolate lovers would no doubt be pleased to receive a luxurious selection of chocolate bars, individual chocolates, flavored drinks and even handmade chocolates.

Another attraction of gift baskets is that they can be specially made to order. This enables the buyer to create a gift basket that contains all the recipientÕs favorite items Ð a treat that will no doubt be very well received.

The main reason people enjoy receiving gift baskets is that they are a real luxury item. Most of us, for example, buy biscuits from time to time, but there is nothing quite like luxury handmade biscuits covered in thick milk chocolate. We may consider these too expensive to buy for ourselves, so when someone buys us a gift basket containing these items, we perceive it as a real treat to be enjoyed and savoured.

Gift baskets can also be delivered as a complete surprise. Most websites that sell them offer the buyer the option to send the item directly to the recipient. We all love to receive flowers, but when a gift basket arrives unexpectedly by courier it can really make our day, as we explore whatÕs held within it.

People also enjoy being pampered, and thatÕs exactly what a gift basket does. They can also open up new possibilities for the receiver, as they try things and taste things that they might never have done otherwise. And of course, the basket itself can be kept and used afterwards for a myriad of other uses.

There arenÕt many people who would be disappointed to receive a well thought out gift basket. Whether it is completely unique, or simply unique to a certain type of person, itÕs the gift that really can keep on giving, long after the cellophane has been stripped away.

Sometimes a gourmet gift basket just doesn’t fit the bill, and you need something even bigger and better to present to that someone special you have in mind.

Step forward the gift hamper the gift basket’s big brother.

The gift hamper allows you to send a much wider range of products based around a specific theme than a standard gift basket would allow. For example, instead of sending a gift basket which contains a small number of samples which would be useful for the mother of a newborn baby, a gift hamper might include regular sized bottles, lotions and lots of other goodies that simply couldn’t be included in a gift basket.

Hampers are also an excellent gift to send to a husband and wife that are difficult to buy for. While you can buy hampers that are aimed specifically at a man or a woman, most are of unisex appeal and can be sent as an anniversary, Christmas or even a wedding gift.

If you think that a hamper is basically a vehicle for sending chocolates and wine to someone on their birthday, think again. The best gift hampers are creative, unusual and not always related to food.

For example, you could buy a breakfast hamper that contains a breakfast tray, a chrome toast rack, and an espresso set. This is perfect for sending to a newlywed couple on their return from their honeymoon.

Or how about a luxurious hamper which includes all the items needed to spend an indulgent night in? This might include a range of different massage oils and even a CD of relaxing music.

And for something completely different, how about sending a gift hamper filled with make up and beauty products for a special woman in your life?

Gift hampers can extend into many areas and more and more people are realising that the gifts they hold do not need to be perishable items, and they can therefore give a gift that will last for months if not years.

Choosing the right gift hamper to send can be tricky, but it helps if you consider who will be receiving it and what kind of things they enjoy. With a little inside knowledge, you can send the perfect hamper to the perfect person, and rest assured they will be delighted with it.

Gourmet Basket would love to customize a gift basket for your specific needs.

Celebrate the Season with Gourmet Chocolates by Jen Wasilewski

If your looking for a great gift for someone with a sophisticated palate, gourmet chocolates can be the answer for you. Gourmet chocolates offer excellent solutions for any gift giving occasions. This holiday ditch the mass produced chocolates in the candy aisle at your local grocery and opt for the real stuff to put a smile on the faces of friends and family alike.

Why go gourmet?

Gourmet chocolate delivers a taste not achieved by mass producers of chocolates. Because gourmet chocolate it produced on a smaller scale by professional chocolate makers, often referred to as chocolatiers, the overall quality is far better than those produced in mass quantities by larger companies.

In many cases, each piece of gourmet chocolate is hand crafted making them unique and scrumptious pieces of artwork to be appreciated by the eyes and the palate. Since gourmet chocolates are hand crafted they are easily made to reflect different seasons and occasions making them perfect gifts.

Gourmet chocolates are considered pieces of art by their makers and thats why professional chocolate makers use only the finest ingredients. Gourmet chocolates, which generally have a higher cocoa content, will offer a richer taste, a strong aroma, and a smoother texture. Ultimately, gourmet chocolates are a sensory celebration.

Tips for Buying Gourmet Chocolate Online

Look for Reputable Online Retailers: There are two places you should consider ordering gourmet chocolates from. The first is directly from the chocolate makers and the second it from well known gourmet retailers. If you are familiar with gourmet chocolates and you know a few well known chocolatiers, then you can visit their website. If your new to the chocolate business, you can find a great selection at online retailers, like igourmet.com that specialize in gourmet goodies.

Be Price Savvy: Every one loves a good deal, but dirt cheap “gourmet” chocolates will often taste like dirt. Instead of finding extremely cheap chocolates, look for chocolates that are on sale or on special if price is an issue. Keep in mind that you are paying for high end products that are made by individuals instead of by machines in a factory.

Familiarize Your Self with Terms: There is a list of terms that can help make the buying process a little easier. You will want to learn the meaning of words like “ganache,” “bonbon,” “truffle,” as well as the various type of chocolate like milk chocolate, bittersweet chocolate and Belgium chocolate to name a few.. Knowing these terms will help to guide your purchase to make sure you are paying for the chocolates you want.

Know When to Order: check with the company you are ordering from to find out how long the chocolates will last for and order accordingly. Since many gourmet chocolates are devoid of the preservatives used in mass produced chocolates, they tend to decrease in flavor and quality if ordered to soon. Generally speaking you should order them no more than three weeks prior to the time they will be given.

Visit igourmet for gourmet goodies including hand crafterd chocolates and gourmet gift baskets. Igourmet is the best place to find gift baskets for any occasion.

Gourmet Gift Baskets by Flowers To Go

How do you give someone a meaningful birthday gift when in all honestly you don’t really know zilch about them?

Weird? Not really, this often happens when you work in a corporation. It would be normal to mingle and be friendly with one or two people, but it’s impossible to know by heart the faces and likes of more than a dozen employees that share the same office space as you do.

Office parties bring out the worst and odd gift ideas in people. More often than not, trite and cliched gift ideas are thrown out to the celebrant, and just because you are in an office doesn’t mean that you should be gifting them office supplies. How many pens, corporate mugs and t-shirts can you receive at an office related party?

The best and most subtle way to avoid this kind of trap is a gourmet gift basket. Packed, packaged and filled with little trinkets of joy, it’s a great way to show that you truly mean to remember the celebrant’s special occasion.

A gourmet gift basket is perfect for these occasions, as you would not really disappoint the recipient. It is very unlikely that anyone would refuse an assortment of biscuits, chocolates and fruits as it’s easily consumable and doesn’t follow any trends. Even if it’s miles away from the interest and the likes of the recipient, a gourmet gift basket filled with healthy food choices is more or less a need in their system. What’s a better gift idea than giving something that would be beneficial for their health? You can be sure that your gift basket will be consumed and deeply appreciated by your officemate or, even your boss.

Gourmet gift baskets can also be a great gift idea for prospective clients. Instead of brandishing them with buckets of corporate related merchandises, a gourmet gift basket would mostly likely make them feel that you have only sincere hopes for your future relationship, and that you mean well for them.

Flowers To Go is a premiere flower retailer in and around the Washington area. Their services include creating gifts for special occasions, providing decor for events, providing business gifts, wedding bouquet arrangements, providing designs and plants funeral and sympathy, and making lasting memories.
